Alma Tierra is not a restaurant. It’s what happens when twenty years of cooking from the land finally have a home of their own.
Inside Balsa Nueva Lodge, in the heart of the Osa Peninsula, this is where I cook what the garden offers, what the animals give, what the season allows. There is no fixed menu. There is no rush. There is bread that took time, vegetables that grew steps away, and food that arrived on your plate because something invisible said: today, this.
We have cows, goats, chickens, ducks, pigs, lambs, cats, a kitchen garden, and a greenhouse that is still becoming. The herbal garden is on its way. The land keeps showing me what it wants.
Come hungry. For food, yes. But also for the kind of stillness that only comes when you slow down long enough to taste something real.
